Council’s First Post-pandemic Dinner a Grand Success
fter a year of isolation because of COVID-19 and the need to keep this disease from spreading, the Council was able to present its first in-door dinner to the community. The Council chose to have a new item in its repertoire of dining choices: Barrel Chicken. That, coupled with a pesto pasta and Italian style salad, followed by chocolate sundae ice cream, made a fantastic dining experience.
With about 100 diners in attendance, the church hall became alive again with activity. The SKD Men’s Club tended the bar, and Brother Jack Magee provided the music.
Brothers Tim Knittel and Matt Waverly hosted the silent auction. A good number of items were available for attendees to choose.
The St. Katharine Drexel Youth group provided the serving of the dinner. Patrons fill buckets with “tips” to support the youth group. This provides additional funds for their various activities.
The income from these dinners (usually three throughout the year) helps the Council to support the various charities, which include the Interfaith Food Bank, the homeless shelter in Jackson, STARS, the Amador Pregnancy and Family Resource Center, and the St. Katharine Drexel Parish.
It takes the work of many Council members to insure the success of the dinners. These include the cooks, ticket sellers, and most of all, the patrons who purchase tickets and attend the affairs. And, finally, Fr. Colin for his overall support of the Knights of Columbus and its various functions throughout the year, whether for community or parish benefit.
